The French microbiologist and chemist Louis Pasteur was the first to research fermentation in the 1850s and 1860s after proving that living cells carried out the process. Traditionally, Saccharomyces cerevisiae strains—the most prevalent and commercially available yeast—are used in fermentation procedures to create wines, beers, and ciders.
